Sensory 4.0: Measurable and Traceable Analyses!

In this work, we use the technique of high-resolution mass spectrometry (Xevo G2-XS QTOF from Waters) to provide sensory evaluations and recognition of commercial coffee blends at an operational cost of R$ 10.00 per sample (variable costs).

How about a beer?

Let's think about the chemistry of beer for business intelligence...

We have developed a process for real-time beer analysis, in which thousands of molecular characteristics were acquired in just 2 seconds per analysis, without sample preparation, covering more than 30 beers. All this from the chemical fingerprint!!

Now, imagine the impact of all the ingredients and processes measured through Sensory 4.0!!!

Low-Cost Spectral Imaging!

Aiming to make spectral imaging more accessible, we have developed a low-cost multispectral equipment. We have already applied it to classify coffee and soybean classes and to differentiate seeds.

How fast can we go with Industry 4.0 (PAT/QbD) requirements?

Currently, knowledge in foodomics can provide real-time information!!!

The REIMS technique (Waters) has been optimized for ultra-fast analysis. In this approach, we apply direct analysis to food and beverage samples (without sample preparation).
